  • The Hinterland Group is seeking an experienced, passionate Executive Chef to lead and deliver our food programs across a growing hospitality and tourism group. This is a hands-on role, working alongside our teams to help deliver day-to-day kitchen services, while also providing leadership, structure, and creative direction across multiple venues and projects.

    This role spans Summergrove Estate, Potager Restaurant, and Tweed Eco Cruises, as well as retail product development and upcoming group projects.

    About the Role

    As Executive Chef, you will be actively involved in daily kitchen operations—supporting services, problem-solving on the ground, and working shoulder-to-shoulder with our Head Chefs and teams. While strategic oversight is part of the position, this role is firmly rooted in practical execution and service delivery.

    You will lead menu development, mentor culinary teams, and oversee the production of retail food products, including spice rubs, smoked and dried meats, artisan jams, relishes, and other value-added food products, many of which will feature beef raised within our group.

    You will also play a key role in organising pop-ups, collaborations, and special events with our brands and with other operators across the Tweed region, strengthening our reputation within the local food and tourism community.

    Key Responsibilities

    Actively participate in and support day-to-day kitchen operations and service delivery across the group.

    Oversee and coordinate food programs across all hospitality and tourism venues.

    Recruit, hire, onboard, and manage culinary team members in collaboration with Head Chefs and senior management.

    Work closely with Head Chefs at Summergrove Estate and Potager Restaurant to maintain quality, consistency, and standards.

    Lead menu development and seasonal menu planning across venues.

    Supervise the production of retail food products, including spice rubs, smoked and dried meats, artisan jams, relishes, and other specialty food products.

    Work with in-house beef production to develop menus and products that showcase our farm-raised meat.

    Organise and deliver pop-up events and collaborative dining experiences with internal brands and Tweed-region operators.

    Support and mentor kitchen teams through coaching, training, and hands-on leadership.

    Supervise and maintain all food safety programs, ensuring compliance with local and state government requirements across all licensed food areas.

    Assist with upcoming hospitality and tourism projects, including concept development and operational support.

    Oversee ordering, cost control, stock management, and kitchen administration.

    About You

    An experienced Executive Chef or Senior Head Chef with strong multi-venue experience.

    A hands-on leader who enjoys being on the tools and leading from the front.

    Proven experience managing teams, services, and operational demands.

    Strong background in menu development, production cooking, and value-added products.

    Demonstrated knowledge of food safety, HACCP, and government compliance requirements.

    Organised, adaptable, and comfortable working across varied environments.

    The Hinterland Collection is a leading tourism and hospitality group in the Tweed Hinterland, home to Summergrove Estate, Elysian Hills, Bellingdale Farm, Cascade Springs, Potager Restaurant, Potager House, Tweed Eco Cruises, and Bellingdale Beef.

    We’re seeking a creative, highly organised, and proactive Social Media & Marketing Coordinator to join our team full-time, based in Carool (25 minutes from Coolangatta).

    Working closely with our Media and Enquiries Team, with direct support from the Marketing & Media Lead, you’ll play a key role in showcasing our venues, driving enquiries, and converting interest into confirmed bookings across multiple brands.

    About the Role

    You will be responsible for:
    ✨ Managing and growing our social media presence across TikTok, Instagram, Facebook, LinkedIn, and Pinterest
    ✨ Creating engaging, on-brand content across multiple venues and experiences
    ✨ Supporting enquiries, direct sales, and assisting with converting leads into confirmed bookings
    Conducting client tours and working directly with couples and clients, confidently showcasing our wedding, event, accommodation, and tourism offerings
    ✨ Assisting with marketing initiatives, campaigns, and overall brand growth
    ✨ Managing and optimising Google Ads (AdWords) and paid campaigns
    ✨ Working with OTAs and booking platforms to support visibility and conversions
    ✨ Coordinating content, messaging, and campaigns across multiple brands and media channels

    What We’re Looking For

    This role is ideal for someone who:
    ✔️ Is a self-starter, highly organised, and confident working independently
    ✔️ Has experience working across a tourism and hospitality portfolio
    ✔️ Is comfortable with direct client sales, venue tours, and relationship building
    ✔️ Can confidently sell and promote weddings, events, accommodation, experiences, and tourism products
    ✔️ Has a strong creative eye and excellent attention to detail
    ✔️ Loves storytelling and understands how content directly impacts bookings

    Experience with Later (or similar scheduling tools), Squarespace, WordPress, Canva, Mailchimp, Google Ads, and booking platforms is highly regarded.
    🎥 Strong content creation skills are essential — drone experience is a major advantage.

    As a Front of House Supervisor, you’ll be responsible for overseeing all service aspects of our wedding events, ensuring seamless execution from start to finish. Your key responsibilities will include, but are not limited to:

  • Paddock-to-Plate Restaurant, Premium Wedding Venues & Accommodation | The Hinterland Collection

    We are seeking an experienced Horticulturist / Landscape Manager to lead the maintenance, development, and future growth of our gardens and productive landscapes across The Hinterland Collection, including a paddock-to-plate restaurant, premium wedding venues, and a diverse range of accommodation.

    This is a hands-on leadership role suited to someone who is equally confident working in the garden, managing a team, and engaging guests through education and tours.

    About the Role
    You will oversee all horticultural and landscaping operations — from ornamental gardens and event landscapes to fruit and vegetable production — while ensuring presentation standards align with premium wedding and accommodation experiences.

    The role also includes oversight of pest management and spraying programs across all Hinterland Collection properties.

    Key Responsibilities

    • Lead, manage, and mentor the horticulture and landscaping team

    • Oversee recruitment, onboarding, and ongoing training of staff

    • Maintain and enhance gardens, lawns, orchards, event spaces, and accommodation surrounds

    • Ensure premium presentation standards for wedding venues and guest accommodation

    • Design, implement, and manage fruit and vegetable growing programs

    • Plan and deliver engaging garden and paddock-to-plate tours

    • Manage daily and seasonal workflows, task planning, and labour allocation

    • Implement and monitor pre-check, safety, and maintenance programs

    • Oversee pest management and spraying programs across Hinterland Collection properties

    • Ensure compliance with WHS, biosecurity, and environmental best practices

    • Collaborate closely with kitchen, events, and operations teams

    About You

    • Qualified horticulturist, landscaper, or equivalent hands-on experience

    • Proven experience managing teams across multiple sites or large estates

    • Strong knowledge of fruit and vegetable production and ornamental gardens

    • Experience maintaining high-end landscapes and event-ready environments

    • Confident communicator, comfortable engaging guests and running tours

    • Highly organised with strong workflow and systems implementation skills

    • Pest and spraying licence is highly regarded

    • Strong eye for detail and presentation

    • Passion for sustainability, food provenance, and paddock-to-plate philosophy
